Ingredients
- 2 oz gin
- 1 oz fresh lemon juice
- 1 oz raspberry syrup
- 1 egg white
- Garnish: a fresh raspberry
Method
Grab your shaker and add everything — gin, lemon juice, raspberry syrup, and egg white. First, do a dry shake with no ice for about ten seconds. This whips the egg white and starts building that foam. Then add ice and shake hard for another fifteen seconds. You want it cold and you want that egg white fully incorporated. The drink should have a thick, creamy foam on top when you’re done. Double strain through a fine mesh strainer into your coupe — this removes any ice chips and gives you that perfect smooth texture. The color should be a beautiful pale pink with bright white foam sitting on top.
Serve
Serve this up in a coupe with no ice. Drop a single fresh raspberry right into the center of the foam — it’ll sit there like a little jewel. If you don’t have raspberries, express a lemon peel over the top and drop it in.
Pro Tip
The raspberry syrup makes all the difference here. You can buy it, but making your own takes five minutes. Equal parts water, sugar, and fresh raspberries. Simmer until the berries break down, strain out the solids. It keeps in the fridge for weeks and tastes infinitely better than the artificial stuff.
